I loved Lost in the Woods, does a great exploration on Cuphead and Mugman's dynamic.

Apart from Ribby and Croaks, I think Goopy is the easiest.
I just completed Funfair Fever using Chalice:
Holding right the whole time.
No shooting allowed (EX attacks allowed, in this case I used the Crackshot's EX attack once).
Finishing with 2HP (I'm pretty sure you can make it with 3HP, but it's very hard).
No Djimmi wishes.
Very hard but fun challenge.

In my opinion, after finishing the game:
Roundabout, Twist-Up (deals a lot of damage), Astral Cookie, Super art 2.
But since you're still against the Devil:
Roundabout, Spread, Smoke Bomb, Super Art 1.
